Malt Varieties

The choice of malt in a beer is responsible for many characteristics, including flavour and the all-important colour.

Malt is a grain (usually barley) that has been soaked, germinated and dried in a kiln. The malting process allows the starches in the grains to turn into sugars which are then metabolised by yeast to create alcohol. A lightly roasted malt will give a paler result, while a malt given a little more heat will create a darker beer.
